Tortilla
Here in San Cristobal de las Casas, there is a tortillerĂa (tortilla "store") on almost every street corner. They are sold by the kilo, or 2.2 lbs. That's a lot of tortillas! Tortillas cost between 8 and 11 pesos a kilo. They're made with corn flour, and although they're good, handmade tortillas are so much better! Ellie is a fan of wheat flour tortillas, which are a lot more expensive. So friend suggested that I make my own flour tortillas! And of course, I have three instant helpers!
Ellie is making the dough into balls. |
Placing the ball carefully in the tortilla press. |
Pressing the tortilla, with all her body weight. |
On the comal (griddle) |
